Raw or Pasteurised Milk?
You do not need to use raw milk to make quark or cottage cheese for the Budwig Diet. Pasteurised milk works perfectly well and is considered the safer choice for anyone with a weakened immune system.
Some people prefer raw milk because they believe it has a better flavour, is richer in nutrients and is easier to digest. If you choose to use raw milk, make sure you understand both the potential benefits and the food safety risks before making your decision.
Finding Raw Milk
Raw cows’ milk can only be bought directly from registered farms. It is available from some farm shops and farmers’ markets, and many farms now supply it by mail order. The Natural Food Finder website can help you locate a supplier.

Other Raw Milks
Goat’s, ewe’s and buffalo milk are becoming easier to find. If you use an alternative milk check that you are happy with its fat content as low-fat and skimmed are hard to find.
For the Budwig Diet, the important factors are the milk protein and ideally being fat-free. The animal from which the milk comes may be of benefit to people who don’t tolerate cow’s milk..
