Cottage Cheese

Cottage cheese plays an essential supporting role in the Budwig diet for its sulphur-rich milk proteins that bind with the highly unsaturated fats (mainly omega-3 and some omega-6) in the linseed oil to make it water soluble and easily absorbed so that the energy and goodness of the omega-3 can be taken to the parts of the body where it is needed.

Quark is the cottage cheese referred to in the diet was originally a low fat or fat-free quark because quark is the usual cottage cheese in Germany where Dr JB lived.


Ordinary low-fat or fat-free cottage cheese from British supermarkets works fine for the Budwig Diet if you can’t get hold of quark.
